Production
The Pinot Gris is sourced from Southern NSW where the climate is hot and dry. This variety holds its acidity well, achieving maximum ripeness with beautifully refreshing balance. Fully ripe at harvest, the fruit showed strong and fresh ‘Williams' pear perfumes with exotic hints of musk. Post-ferment, the wine was kept on yeast-lees with occasional battonage to add extra textural creaminess. This has generated a honeyed, velvety softness under the principal characters of pear and apple. The Vermentino fruit is sourced from the upper reaches of the Hunter Valley. The hot and sunny continental climate is ideally suited to this late ripening variety, and low yielding vines generate a distinctive and lively fruit expression.Typical of this variety, it possesses bright characters of white peach plus lemon at the fore, plus elemental herb notes of fennel, and subtler textural notes of crushed almond. This variety’s savouriness and length are key elements to Ephemera’s blend magic.
Tasting notes
Pinot Gris (88%) exhibits the dominant power at first, suppling the richer aromas of pear, and an exotic slinky fruit presence that stays on the palate with hints of finely spun honey. The vibrant elements, though, come from Fiano (12%), contributing a bright lift of tangy citrus to both aroma and palate, plus a finely balanced accent of celery and fennel. It tempers the flavours of Pinot Gris with a precise savoury dryness, such that the final length is purely Vermentino in nature, fading with soft, crunchy minerality.
