100% Chenin Blanc. L’Enchentoir has light, clay soil over an adaptation of tuffeau limestone, making it unique in the village, and perfect for Chenin Blanc. The vines are planted in Cordon Royat an massale selected where new plantings are made. The pressing takes 4 hours and the wine is fermented and aged in 600 litre Demi Muid, 12 mths, on the lees. It is a complex, richly hued wine with considerable power and intensity, but underpinned by gloriously fresh and lively acidity, and a mineral coolness.
