Clos des Vignes du Mayne is a family winery owned by the Guillots who acquired the domain in 1952. This land has been used for winemaking since 910 and no chemical products have ever been used there. Continuing to follow this philosophy, the Guillot family began working organically then biodynamically, and they make their wines in the most natural way possible without adding any wine products.
Julien Guillot Bourgogne Rouge Les Crays comes from a small plot of vines aged around 40 years old and planted in calcareous soil. Certified by Demeter, the biodynamic association, they use natural treatments and preparations to protect and maintain the natural balance of the vine and the terroir. The harvest is manual and the grapes are selected in the vineyard itself.
In the winery, the Julien Guillot Bourgogne Rouge Les Crays grapes are macerated in whole bunches for about 8 days. Following spontaneous fermentation with native yeasts, the wine ages in wooden barrels for 12 months. It is finally bottled without being filtered, clarified or adding sulphur.
Although the bottle looks quite traditional, Julien Guillot Bourgogne Rouge Les Crays is a funky natural wine. It is completely pure and the perfect introduction to the work of one of the best natural winegrowers in Burgundy; Julien Guillot.
