The grapes were sourced from a 1.8ha plot. 10% of the must was fermented in new French fine grain oak barrels (from the Allary cooperage) at low temperatures. 90% was fermented in stainless steel tanks. Once fermentation was complete, around two months later, the two parts were blended together. The wine was then aged on fine lees in stainless steel for a further 22 months.
Tasting notes
Ripe apple and honey are joined with a toasty toffee nose from an extended lees period and 10% fine grained French oak. On the palate there are ripe apple, citrus and tropical fruit characters, with subtle toasty hints and a fresh, balancing acidity. An elegant yet complex wine with good length on the finish.
